how to cook

fresh long & short pasta

Bring 1 gallon of water in a rolling boil.

Add coarse grind salt: 2 teaspoon

Add fresh pasta to boiling water.

Stir gently with carving fork.

Put in a pan your favourite sauce to reheat.

For authentic “al dente” fresh pasta, boil uncovered, stirring very gently occasionally for 4 minutes.

Remove from heat.

Drain well.

Whisk for 1 minute the pasta in the pan where you reheat the sauce.

Serve immediately with Parmigiano Reggiano grind cheese.

gnocchi & stuffed pasta

Bring 1 gallon of water in a rolling boil.

Add coarse grind salt: 2 teaspoon

Add frozen pasta to boiling water.

Stir gently with a big spoon.

Put in a pan your favourite sauce to reheat.

For authentic “al dente” fresh pasta, boil uncovered, stirring very gently occasionally for 3 minutes or when the Gnocchi starts floating.

Remove from heat.

Drain well.

Whisk for 1 minute the pasta in the pan where you reheat the sauce.

Serve immediately with Parmigiano Reggiano grind cheese.
